Raspberry Lemonade Crumb Muffins

Ben got so excited that he stuffed an entire muffin into his mouth shortly after they came out of the oven (these are not mini, mind you.) And while the muffin itself had cooled down slightly, the plump raspberries inside were still molten, rendering him teary eyed and only able to squawk out a tormented,

as he searched for a cool pocket among the blazing berries that were exploding against the roof of his mouth. I laughed ’til I cried while patting him on the back and trying to convince him to just spit the dang thing out. He refused. Hurt so good, or something like that

1/4 cup butter, room temperature
1/4 cup unsweetened applesauce
1 cup sugar
2 eggs
1/3 cup milk
1 Tablespoon lemon zest (about 2 lemons worth)
1 Tablespoon lemon juice
1 teaspoon vanilla
1-1/2 cups flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1-1/2 cups frozen raspberries

Parlez-Vous Croissant?

The croissant has evolved…into a crescent roll.  Let me explain.  From the time I was in college until about 10 years ago, croissants were flaky, layered, buttery rolls of heaven.  No matter where I bought them, they were all of the above, even the supermarket bakeries.  I remember stopping at some a few mornings a week before work, and opening the plexiglass case, crumpled tissue in hand like a baseball mitt, ready to grab the freshest ones before anyone else could.  Even the BK ‘croissandwich’ was flaky, with buttery layers!ds34sd

Fried plantains with cheese

A skillet full of lightly fried sweet ripe plantains topped with melted cheese is my ultimate comfort food. My mom used to prepare plantains this way for breakfast when I was a kid, so this dish always brings back warm memories. On those days when I feel homesick or I need a pick-me up kind of meal, a plate full of platanos maduros con queso or ripe fried plantains with cheese is the perfect curefdg45fd

  • ½ to 1 tablespoon oil or butter

  • 1 to 1 ½ ripe plantains per person – depending on the size of the plantain and how hungry you are

  • ½ cup of grated mozzarella cheese per person, or grated quesillo or a mix of mozzarella and queso fresco – this is about 4 to 5 ounces depending on the type of cheese

Strawberry sauce

Homemade strawberry sauce - for pancakes, waffles, ice cream, cake... 1 lb. strawberries, washed, hulled & sliced ¼ cup sugar or grated panela/piloncillo - adjust more or less to your preference ¼ cup water ½ lemon, juiced Instructions Combine all the ingredients in a small pot over medium heat. Bring to a boil and cook over medium low heat for 20-30 minutes. Serve warm or cold. dsf5r4df

  • ¼ cup sugar or grated panela/piloncillo - adjust more or less to your preference

  • ¼ cup water

  • ½ lemon, juiced



    1. Combine all the ingredients in a small pot over medium heat.

    2. Bring to a boil and cook over medium low heat for 20-30 minutes.

    3. Serve warm or cold.



Pristiños navideños

Pristiños are a traditional Christmas dessert in Ecuador. These fried pastries are served with miel de panelaor piloncillo syrup. Pristiños are usually made in the form of a crown, but depending on the family who makes them they can have different shapes. Pristiños are a cousin the better known buñuelos that are also a popular Christmas dessert in Latin American and Spain. One of the main differences between pristiños and buñuelos is that pristiños are made with baking powder while buñuelos are made with yeast, the buñuelo dough is also a more liquid dough.df45df


    • 1 cup water

    • 2-3 cinnamon stick

    • 2 whole cloves

    • 1 tsp. anise seeds



Pristiño dough:

  • 3 cups flour

  • 1 tbsp. sugar

  • 1 tsp. baking powder

  • ¼ tsp. salt

  • 6 tbsp. butter (3/4 stick) or 3 oz

  • 2 egg yolks

  • 1 tbsp. lemon juice

  • ¼ cup aguardiente

  • ½ cup lukewarm spiced water + additional as needed. If using regular water, then add ½ tsp ground cinnamon, 1/8 tsp ground cloves, 1 tsp anise seeds directly to the dough

  • ~2 cups of canola oil for frying

Cinnamon Roll Waffles

To say these waffles were amazing would be an understatement.

These waffles could easily be one of my new top favorite breakfasts!  Everyone who ate them LOVED them, but seriously who wouldn’t?!  They are INCREDIBLE!

Very easy to make, very tasty, and the best breakfast for everyone, especially for children.

  • 1 3/4 cup All Purpose Flour

  • 2 Tbsp. sugar

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

  • 2 large eggs

  • 2 cups buttermilk

  • 1/4 cup canola oil

  • 1/2 tsp. vanilla

  • - CINNAMON TOPPING -

  • 1/2 cup butter melted

  • 3/4 cup brown sugar packed

  • 1 Tbsp. ground cinnamon

  • - CREAM CHEESE TOPPING -

  • 4 Tbsp. butter softened

  • 2 ounces cream cheese

  • 3/4 cup powdered sugar

  • 1/2 tsp. vanilla


 

Carrot Cake Waffles

Today, my flashy baking name is the Waffle Wrangler. See, I finally acquired a waffle iron. Or . . . okay, actually I acquired it months ago. You’ll forgive me for not having tried it out yet, right? Especially since I happen to know for a fact your waffle iron is sitting under a coat of dust in a dark cabinet somewhere? It’s okay! No shame! You just need a reason to lug it out, wipe it off, and heat it up. I think I can help.

CARROT CAKE WAFFLES! I’ve actually been trying to think of some recipe to add carrot cake flavors to after seeing this amazing Carrot Cake Ice Cream over on Not Quite Nigella. This was my chance!

Ingredients:

  • 2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 2 tablespoons sugar

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon cinnamon

  • 1 teaspoon nutmeg

  • 1 teaspoon allspice

  • 1 3/4 cups buttermilk* or 1 1/2 cups sour cream or plain yogurt thinned with 1/4 cup milk

  • 2 eggs, separated

  • 4 tablespoons (1/2 stick) butter

  • 1/2 teaspoon vanilla extract

  • 1 cup raisins

  • 1 cup walnuts, chopped

  • 1 1/2 cup finely grated carrots

  • Cooking spray for waffle iron
