DIY Cake Balls
Continuing with the theme of DIY-ing everything possible, I'd like to share a really simple recipe that is easy to throw together but takes a bit of time to artfully assemble. Cake pops and cake balls have been a popular confection in the last while & aren't just a perfect bite-sized treat but also keep quite well! I've baked these for the past few showers and parties that I've gone to & they've been a huge hit because of their adorable ornate beauty and yummy, moist texture. Here's how to put a batch together:
What you'll need:
- A pack of cake mix (plus eggs, milk and oil, as per directions)
- a tub of "matching" frosting
- a few handfuls of coloured molding chips
First bake a pack of cake mix in any flavour you choose! These are basically foolproof and come in a great variety of flavours like chocolate, vanilla, lemon, cherry chip etc. If you want to go fruity you can grab a white cake pack and combine a pack of jello powder in for colour and flavour! After baking according to the box instructions, let the cakes cool and then break them up and crumble them with a mixer!
Then grab your matching frosting and stir in about half a tub per box of cake mix. Blend together with your mixer and you'll have a bit of a doughy cake mixture.
Grab small spoonfuls (about bite-sized amounts) of your cake mix and form round balls. One batch has made about 70 to 85 balls for me in the past. Take this stack & refrigerate for a couple of hours so that they're ready for dipping.
Take a handful of molding chips and put them into a bowl. You can microwave them for about 20 seconds at a time, taking them out and stirring to make sure the heat is evenly distributed. Once you have the chocolate melted, just dip your cake balls into it. Use a fork to lift it up & drip off the excess and then place them onto some wax paper to set. I don't have any photos of that process because it was very messy, and once you get into the flow of it... you forget to take pictures ;)
The chocolate should set at room temperature in about 30 seconds and then you can melt some chips in a ziploc bag and cut off a corner to pipe on simple designs. The easiest designs are just to drizzle them but I went into more details with dotting and swirls :)
